New Korean eatery a winner

A new restaurant called Threshold opened the week of November 13 in Livingston Manor. Manor Ink visited for Sunday dinner and interviewed chef Thom Chun and owners to learn what kind of place they hope to offer our community.
“It has been incredibly important to us that folks who live here, whether they’re transplants or have lived here for multiple generations, people are meant to come here and feel comfortable,” co-owner Cam Shaw explained. “I want folks to know that everyone is welcome here, everyone is wanted here, that you will always be able to find something on the menu that’s affordably priced, that will get you full. And I also want folks to know that if they want to celebrate an occasion with us and a bigger meal here is outside of their budget, that they can get in touch with us and we will make the meal that they envision fit their budget.”
Threshold also tries to be as accessible to everyone, making sure customers can get gluten-free or vegetarian options, not to mention that they also are completely wheelchair friendly.
The menu is not extensive, but everything we sampled was delicious and healthy. If you’re looking for something simple, you can get the Half Chicken Ssam, or if you’re interested in something more exotic, we recommend either the Acorn Jelly or the Potato with chicken fat and trout roe. For an entree with a twist, you could try the Hot Chicken Noodle Soup or the Vegetable Fritters, which are like onion rings but with more than just onions.
Threshold is an incredible place to dine for anyone looking for a reasonably priced, high-quality meal that’s also delicious. We also can’t stress enough how cozy and warm the dining room feels. The owners are new to the town, so if you happen by, make sure to say “hi.” A lot of work has very clearly gone into making the restaurant very welcoming, and it worked.
Threshold is located at 430 Old Rte. 17 in Livingston Manor, right across from KC’s Airport. It’s open Wednesday through Saturday, 5 to 10 p.m., and Sunday, 5 to 9 p.m. To see a menu, visit thresholdcatskills.com.
